There is so much fruit on this island, it's hard to believe that most of it just sits on the tree, only because to pick it all would also be wasteful. To let it rot in pails would be worse than letting the birds have it. But we did get our apple juice pickin's planned and these juicy Macs will be rendered into gallons of juice that will keep us scurvy-free all winter. Apple crisp, apple sauce, apple fritters.....

Apple pies are another alternative. Make them up and freeze them before cooking them. When you are ready to eat one, cook it the regular way and they taste like freshly made pies. I made 8 pies with the apples from Scott's tree. The studio is looking great. Continued good success with this project. It's still snowing here. YUK, YUK.
